White Bean, Potato, & Kale Soup

First off, I have some very exciting news…I did my very first guest post over at Julie’s awesome Blog, A Better Life…With Burgers Show some major love…check it out!
 Now, on to the main event: I have the perfect meal for you…especially on a cold, snowy/rainy day.  Oh YES! Let me introduce you to White Bean, Potato, and Kale soup.  (If you can’t tell, I am on a Kale kick.) So hearty, healthy, and yummy.  Throw everything together…and have a meal for days! Give this a try…tonight! You will not be let down.
Here’s what you need:
(If your missing any of these ingredients, just substitute, that’s the best part)
•2 cans White Beans, drained and rinsed
•3/4 Chopped Carrots
•3/4 Chopped Celery
•3/4 Chopped Onions
•4 C. Chopped Kale
•3 Large Red potatoes (Use what you have)
•1 Quart Vegetable broth
•1-2 C. Water
•3-4 Tbsp Olive Oil
•1-2 chopped Garlic cloves
•Sea salt/pepper  to taste
•Parsley
•Basil
• 2 Bay leaves
•Juice of half a lemon
 
Directions: Heat oil in pan, add onions and celery until  translucent.  Add carrots to pan until soft.  Add vegetable broth, potatoes, beans, lemon juice, and  all seasonings.  Place Kale on top and place lid over pot.  Let the kale steam and get soft. Add water if needed.  Bring to boil.  Simmer for about an hour.
