Almond Butter Granola

After a GLORIOUS three-day weekend, I had some fun in the kitchen. Oh Yes. I am slightly obsessed with Almond Butter. I can put in on anything.  Mix it up with honey and cinnamon…& I am sold! 
But First, let’s talk about the Farm to Table convention.  I had a blast.  Met lots of new people, learned loads of info, and ate about a million samples of cheese, crackers, and dips.  It was awesome.  
After the convention, Nick and I went to a yummy authentic Greek restaurant in downtown Pittsburgh.  So delicious!! Nick had the classic gyro and I had a vegetable platter filled with all the best Greek choices such hummus, pita, grape leaves, and spinach/feta pie.  
 

Now…onto Almond Butter Granola.

I found this recipe on Julie’s Blog, BLWB and she got this recipe from Julie’s blog, Peanut Butter Fingers WOW that was confusing!! I tweaked it a bit, but no matter how you make it, you will love it.  A great snack!

Makes four 1/4 c. servings

Ingredients:
 3 Tbsp Almond Butter OR 2 tbsp Peanut Butter
2 Tbsp Honey
1 tsp Cinnamon
1 tsp Vanilla extract
1 Cup  oats
 
Preheat oven 325 degrees. Mix up the Almond Butter and honey.  Heat it up for about 20-25 seconds in the microwave.  Add the Cinnamon and vanilla extract. Mix it all up.  Add the mixture to the oats.  Make sure the oats are covered.  Spread out the oats evenly on a greased pan.  Place in oven for 8-10 minutes.  Let cool to crisp.  
 
So GOOD.  I am actually trying not to eat the whole batch as I type this.  Okay, trying to control myself.  Make it, you will not regret it! What is your favorite type of granola?
