Chicken Gyros with Yogurt Dressing

This past Sunday I did a lot of cooking  prep for the week. One of the items I made was a whole chicken.  I discarded all the skin/fat/bones and made sure to get all the white meat off to store in a container.  I planned a fantastic meal for Monday night’s dinner, we had chicken gyros! A super easy recipe that is tasty, healthy, and came together in about 20 minutes because I already had the chicken ready to go!

Sometimes I get so tired of chicken. I am always looking for new ways to add it to meals.  So I hope you enjoy this easy dish as much as we did!

  1. Sounds tasty! Not sure if you’ve ever done this, but I use the leftover chicken carcass (not a fan of that word!) to make homemade chicken broth/stock. It’s really nutritious and means you don’t have to buy it at the store.
