It is definitely a Monday around here. I am tired yet feeling energized for a full week ahead. It is SO chilly here in Pittsburgh. My furnace was blasting this morning and I had to start my car 15 minutes before leaving. UGH! Did everyone have a great weekend? Yesterday, I stayed in my PJs all day. Like literally. No shame here! It was amazing. And bonus points for me..I somewhat organized my closet! I have been on an organization/home projects kick. Great for our house, not so great for my wallet. I have been research flooring options. Have any of you ever laid PERGO flooring?! Tips?

Good Morning! How is everyone this morning?!
One of my favorite blogs, Eat, Live, Run, will often write a post called a virtual coffee date, it’s simply a post as if we were having a coffee date! Like if you and I were sitting at my local coffee shop, what would we talk about? Gossiping, catching up on life, ya know…chatting it up! I really loved the idea of the “coffee dates” so I decided to borrow it!
So, grab yourself a hot cup of coffee and lets start talking…go ahead, I’ll wait!
If we were having coffee this morning, I would tell you that I am leaving to go on vacation tomorrow morning! EKKKKKK! I am SO excited! To actually be off for 10 days…I can’t even begin to show my excitement! I am totally burnt out from work, and could really use a recharge. We are heading to Myrtle Beach, South Carolina! I think what I am most excited for is relaxing by the beach. Nick and I are headed there with his family and we both are really looking forward to it. Sun, fun, family, and relaxation! What more can you ask for?!
I would tell you that even though I am SO excited for vacation, I am anxious about leaving Henry! I know, I know! People think I am crazy! My mom is going to be watching Henry for the week. She is in for it! I am sure they will have a blast! 😉 THANKS MOM!!! (As I am writing this, he is curled up next to me, I can’t even stand the cuteness!)
I would tell you that I am disappointed in myself because I haven’t been exercising regularly like I should! My schedule has been a little hectic (Sounds like a typical excuse!). I have squeezed it in when I can, but have felt guilty about it. I guess I am only human…right?! Please tell me I am not the only one!
I would ask you what books your currently reading. I am planning on reading at the beach. I have about 100000 books that are on my “to read” list. Up first…The MatchMaker by Elin Hilderbrand I think it will be the perfect beach read! Also on my list, The Silent Wife by A.S.A Harrison. Let me know if you have any suggestions to add to my list!
If we were having coffee I would tell you that I cannot stop listening to Rather be by Clean Bandit, latch by Disclosure. I would also tell you that I have been obsessed with Nora Jones station on IheartRadio! Random! It’s the best with a glass of red wine in hand.
And lastly, I would share with you my new favorite summer drink! There is a local bar that sells a drink called a cucumber peel….Cucumber vodka, lemon, and club soda, with a big cucumber slice in it. Guys…its to die for! If I were to recreate it, I would add mint!

Uh Oh!!! Do you like iced coffee drinks? Make your own at home!!
Lately, I LOVE coffee… I can’t seem to get enough. Okay, really I just drink it in the mornings and every once in awhile in the afternoon. It has been HOT in Pittsburgh, like 90 degree hot. I am a huge baby when it comes to the heat. Let’s just say I am not doing to well without air conditioning. Me and Henry…yeah both of us are demanding an air conditioner!!! It’s totally acceptable to say were a little dramatic!
So back to my point of this post… Iced coffee! Yum, it hits the spot on those super hot days!! But here is my tip, make your own at home!Check out the article below about how calorie and fat packed some of the choices are if you stop at a fast food place for an iced coffee….surprised?!? Prob not, but its always a good reminder!
Follow these recipes for an easy at home ICED COFFEE without the extra calories and fat!
~Used leftover coffee to make ice cubes. Just like water, add the coffee to your ice cube trays. The coffee cubes won’t water down your coffee!
~When the coffee is still warm, add sugar/honey/simple sugar (I actually don’t like sugar in my coffee!!) to your liking and mix until the sugar is dissolved. You can keep it in the pot, put it in a pitcher, or pour it into the glass you will be using.
~Put your warm coffee into the refrigerator and let it cool until you’re ready to drink later.
~When you’re ready for your morning Joe or a mid-day pick me up, add cream or your favorite flavored creamer, or a splash of coconut milk!
~Don’t forget to add your coffee ice cubes!!!
